Not sure why you’re getting the okra-roux hate! I use this method for my “green gumbo”, or gumbo z’herbes, and no one believes that there isn’t a roux in that gumbo. Its a delicious and effective alternative to a traditional roux.

I pay no mind. I know how good the gumbo my MIL makes is, roux or not.

When friends or family make a gumbo you have 2 choices. Eat it without rice or bring your own rotisserie chicken to eat.

I make gumbo with roux, my wife does not and hers is as good as mine it’s just a little thinner. Use a lot of vegetables and run them through the food processor which gives it some body. You want to thicken use file’ or okra.

You want rice microwave cauliflower rice and substitute. Works fine. Forget the French bread.
