We really have to literally start tarring and feathering judges like this and ban them from ever practicing law of any kind going forward

And that tells us what about OP's situation? He signed a sworn affidavit admitting that he is the biological father. He is on the hook for child support. If Mom gets any welfare, La. has the right to take child support from OP regardless of whether Mom wants that or not.

I often hear stories of people taking baseball hits to their knees over stupid shite, I'd imagine this sort of behavior runs the risk of just that.

Family court is a terrifying terrifying place. American Family Court System is one of the most fricked up "legal" systems on the planet.
I had an old boss that was in the special forces in the Vietnam War and a P.O.W. He said he was more scared in family court than in Vietnam.
