Come to Bay St Louis, she'll like it more. Air bnb, or the like. Rent a golf cart or bikes and enjoy yourselves. Much better than anything within a couple of hours east.

The waters in Biloxi Bay, the Back Bay and those to the west have high coliform counts, especially in the summer.

It's in the water. You've probably been in contact with it a bunch of times but your immune system fought it off.
And it's not just saltwater either. Here at the Ross Barnett Reservoir, a 22 year old man almost lost the bottom half of his leg.
Honestly, it's just not worth it.
You can catch it by ingestion too, so eating raw seafood is a risk now.
