Cheap street food of Vietnam (lots of pics)

From my trip to HCMC, Hoi An Da Nang, Nha Trang. The pics are from the streets and various shops. None of these are from touristy restaurants. Theses are what the locals eat.
Each post will pertain to the related items. I might not even have time to post all the pictures today.

Got to start with Pho right? A lot of these pics are from these typical Pho shops. By that, I mean they set up in these buildings where the 1st floor is where the family sell the Pho. And 2nd, 3rd,4th floor is where they live. It's a cheaper way of doing business than leasing out a separate location.
This places seems to be the busiest of all the ones I visited. About $1.30 a bowl
This is their beef pho. Very flavorful and light.
This is their chicken pho. Notice the thickness of the noodles. This is Northern style pho and the noodles are thicker and more cake-like, sticking together. Southern style(like the 1st pic) has thinner noodles and al dente texture. I prefer Southern style.
Here is another shop. Around $1.30 a bowl

Another shop. It seems like these pho places are always run by these old ladies. They must be doing something right.
Chicken and beef combo pho. This is their specialty. Again, $1.30 or 30,000 dongs a bowl.
This shop is real popular with the locals.
Usually $1.50 a bowl but I went for the special bowl for $2.40. This one has fatty brisket and rare eye of round so a lot of meat.
Here is the last location in Nha Trang. Take a look at the menu. You can tell the Russians visit this city a lot.
Chicken pho with clear noodle. You can see how rich and fatty this broth. $2.20 per bowl.
On a side note, most of these shops will only open in the morning till 11 am and reopen around 530 pm. Not sure why they don't open at lunch. Maybe it's too hot. And they don't use siracha chili sauce. They use this

Banh Can. Originated in Nha Trang, these are eaten mostly as breakfast food item. They're are made from rice batter. They are crispy on one side and fluffy on the other side. It's similar to eating a small, light pancake.
These are made with quail eggs
Finished product. I think this plate is 70 cents.
You'd dip them in a bowl containing sautéed green onions and home made fish sauce (chili, garlic, lime)
This one has chicken yolk.
With squid and shredded green mango.
With local caught shrimp.
The squid and shrimp plates are a bit more expensive at $1.30 a plate. These are really good. If you have a chance to eat them, ask them to be made extra crispy.

Banh Xeo. These are like rice omelets. However, they come in different size and color. White banh xeo is mostly from a rice batter. Yellow banh xeo has tumeric in them. So white version is more plain flavor and yellow version has a orange/ginger flavor.
This one is a combo banh xeo, and it has pork, quail egg, shrimp, baby squid, bean sprouts. I think these are 40 cents each.
Finished product
Wrap it up with some greens and dip them in homemade fish sauce.
White bahn xeo. 3 per plate and each plate at $1.30.
Here's a one with baby a squid. It's best if the squid has ink in them.

On a side note, for some reasons these street vendors do not sell drinks. If you're thirsty, they have coolers filled with various types of iced tea. You'd just take a little plastic scoop and help yourself.

I love the minimalist approach to preparing the shrimp. Didn't even bother to peel or de-vein them. Thanks for sharing your pics!

BBQ rice paper, filled with green onions, quail egg, minced pork, dried shrimp, chili sauce. Eaten as a snack. 40 cents each.
Finished product. A crunchy, shrimpy, salty, spicy snack.
Here's a yellow rice paper version.
They look like Vietnamese version of a calzones. Steinbrenner would've love them.

BBQ Bread. This must be a recent item because I've never heard of it. It's not too bad. Looks a little gimmicky. 40 cents.

I went to Vietnam about 15 years ago and I didn't take any pics of the food. The two food items that stand out were the water buffalo steaks from a little restaurant next door to the peace hotel in HCMC and the biggest shrimp I have ever seen in camron bay. Those were top tier food items that I wish I could get here. I also remember the fresh pineapple that was vended by kids that had to be about 6 years old. They had huge razor sharp machetes and they would clean and prep the pineapples to order. We are so many of those that we got ulcers in our mouth.
I wish I could find my way back but I just don't think it will ever happen.
