I'm not much of a cheese guy either. Hell, I haven't heard of 75% of the cheeses mentioned here but since you started it....Pepper jack is fine with me.

That Coastal aged cheddar is my "house cheese"....I am never without a block in my fridge. It holds up against many far more expensive cheddars.

Haven't been to La Grand Vefour, but have been to a 3-Michelin star restaurant in Alsace and have to agree a great cheese cart at an authentic upscale French restaurant is truly a spectacle to behold!
