it actually started out as poor food (shitty parts of a pig mixed with rice and onions, etc) but we turned into a delicacy.
Go eat any boudin you can find in Eunice/Mamou and you will really understand what its about.
tamales are the shite too, nothing better than a homemade tamale that some old mexican lady whipped up for you.

Almost all good food was at one time poor people food- if you're rich you could just get a big chunk of good meat, if you were poor you had to learn how to season and cook properly.

And, I cannot, for the life of me, recall a single cultural investment in cuisine that the great state of AL has contributed? Seriously, Bama is devoid of any culture outside of it's horrifically racist past.....and maybe Bama football.
