My wife is pretty laid back about my gaming and usually doesn't give me any grief. She realizes that she watches plenty of tv shows that don't interest me (I watch very little tv), so it would be pretty hypocritical of her to bitch at me for video games. That said, since the Nintendo Switch and Breath of the Wild came out I can feel her judging me for playing so much... And she's absolutely right. It's bad.

You won't be 15 forever.

Life is about balance. Don't spend all of your time playing video games.
My wife doesn't play games, but I do and our kids do, so she is slowly getting into it.

I'm 31 and married. We made a deal where I play as much as I want without interruption 3 days a week. I work 50 hours a week and I get to game for around 20. I'm happy. She's happy. I also sneak some extra playing time when she falls asleep early or when she goes for her runs in the morning.

Maybe for you, but I live my life for myself and myself only. I do what I want when I want and do not want kids or marriage probably ever, I think marriage is a sham and I enjoy my freedom without having to please some woman by doing shite I don't want to do for a piece of pussy once a month.
You just admitted it isn't just me. You don't want a partner and that's fine. I'm married with a young daughter, I want to be there in her life, not playing video games all the time. My wife does a good job of letting me have game time. Hell I ride motorcycles all over the place too. I just make sure she and my daughter gets the quality time they deserve and if I don't then I don't mind her giving me a heads up to spend more time with them.

It took me about 5-6 years to get it through to my wife that video games were my hobby and they weren't going away. Luckily for those 5-6 years we weren't living together (college/post-grad/basic), so it didn't really affect me. We've been living together since we got married 5 years ago and I play pretty regularly.
It helps that she scrapbooks for a hobby so I can play while she does that. She also doesn't watch much TV, so she doesn't care when I debo the set for gaming.

My wife has to be up like 2 hours earlier than me for her job, so she ends up going to bed about 2 hours earlier than me too. That's when I get in my me-time. Come home, she cooks dinner, we eat and talk/watch tv/play with the dogs, then she passes out and I do whatever I want. Been a nice system so far

Noise cancelling headphones.
Seriously, I don't game a lot and there are far worse things I could do with spare time so she doesn't complain.
I also have a separate room (office) in the house and that's where my setup is.

You know, for the longest time (been married for almost 9 years), my wife didn't want a thing to do with video games. it caused us a TON of issues early on in our marriage. So like any respectful husband, we sat down and worked out a schedule for gaming. This way I had my time to relax and de-stress and then there was time for her and I (and the kids later on down the road). This schedule eventually played a huge role as it was based on my streaming schedule. So not only was I able to play games do de-stress, I was able to give my potential viewers a solid schedule so they knew when I would be on.
Fast forward a few years and a few kids and the schedule remains mostly the same. We have 3 kids now, so sometimes my stream will start a bit late, or I will cut it off a bit early if I am just exhausted or if she needs help with something. Here in the last 6 months or so, she started sitting in on some of my streams and talking with my viewers and found herself having fun. So I bought a game upon recommendation (Until Dawn) and she streamed on my channel and got addicted. She now owns her own PS4, her own Twitch channel and we are working on getting an office space for the both of us to game when we get down time.
Tl;dr - my wife wasn't fond of my gaming but I told her it was my hobby so she accepted it. We came up with a schedule to split between de-stressing with gaming and family time. She started watching me play, and tried streaming herself and loved it. She now games occasionally with me or on her own.

Tell her to stfu.
She has two choices:
1. Deal with it
2. Leave

She hates it. Is what it is.
