Best marinara sauce recipe

Looking for the best marinara sauce for meat balls and for sausage.

That's very similar to mine MD. I use honey instead of sugar and red pepper flakes instead of black pepper and I add a bay leaf but that's the only difference.

this is what i use
1/3 cup chicken or veal stock
1/4 cup diced yellow onion
1 clove garlic, minced
1/4 cup fresh flat-leaf Italian parsley, chopped fine
1/2 lb ground beef
1/2 lb ground pork
1/2 lb ground veal
1/3 cup plain breadcrumbs
2 eggs
1/4 cup parmigiano-reggiano cheese, grated
1 teaspoon red pepper flakes
1 teaspoon salt
I put the onion, garlic, stock, salt in a small processor to make a slurry type mixture and then add that to my meat mixture. I don't like chunks of onion so i get that as small as possible

Was visiting my cousins this summer in Quartieri Spagnola-Napoli. This is how they made their marinara:
-peeled and crushed about a dozen San Marzano tomatoes
-Rough cut one yellow onion
-sliced paper thin 3 cloves of garlic
-about a 1/4 teaspoon of this red chili paste from a tube (Haven't found it in the states)
-couple pinches of salt
-3 or 4 good pinches of sugar
-They heated olive oil on high in an oven OK pan on the stove and added the onion and cooked till translucent
-next added the garlic and pepper paste, after about 2 minutes they added the tomatoes, sugar, and salt-cooked this for about 5 minutes
-They put the pan in an oven at 150c (300f) and we went out for about 2 1/2 hours.
-When we got back they took the pan out of the oven and the sauce in the pan looked like a dark red mud. My cousin then stirred one large tablespoon of fresh homemade Mascarpone cheese into the sauce, turning it almost an orange color. She mixed it with this smaller rigatoni type pasta (haven't found this either in the states) and 2 tablespoons of the pasta water. Best pasta I've ever had. Really simple.

Try adding a pinch or two of coriandolo to the sauce. It works wonders and gives it a subtle citrusy zing
