What do y'all do? I've done the bacon wrapped thing before; and while I thoroughly enjoyed it, I'm always looking for new recipes.

Did you marinade beforehand? I recently cooked one like this but marinaded in a dales/brown sugar mixture and then topped with diced garlic prior to wrapping it in bacon. Cooked until medium rare, it was great

Salt, pepper. Quick sear on the grill or hot skillet. Serve med-rare.

Stuff with sauteed red onions and mushrooms. A glaze with a combo of red wine and Sweet Baby Ray's. And you can never go wrong wrapping something in bacon.

Marinate in low sodium Dale's and Montreal stake seasoning overnight. Not too much though.

Bring to room temp.

Cook as desired.

Whatever you do, don't marinate a backstrap. It's too tender and delicious naturally. Save the marinade for lower quality meats.
