Sympathy for The Devil - Guns N' Roses (orig by Rolling Stones)

Stormy Monday - Allman Brothers - Live at the Fillmore East (orig by T-Bone Walker)

A Hard Rain's Gonna Fall - Edie Brickell (orig by Bob Dylan)

Make You Feel My Love - Adele (orig by Bob Dylan)

How about this one...
After Midnight (1988) - Eric Clapton (orig was Clapton from 1973). The 1988 version was completely rearranged and modernized. Immensely better.

April Wine's version of the Lorence Hud song "Sign of the Gypsy Queen"

Been jamming the song for decades, but just learned recently it is a cover. The original by Hud was a Canadian hit but is weak in comparison.

The original was actually by JJ Cale.
