I recently went to Mexico and learned how to make real corn tortillas which were incredible. When I got back I researched and found you can make them with Masa flour and water.
I takes no more than 5 minutes to make them into a ball. All you need to do is press out and cook. Way better than store bought.

I bought some last night.
The texture was good but I feel like they didn't have any flavor to them. They tasted like nothing.
Maybe I didn't cook them long enough.
I'll try again at lunch.

quote:Good. I hate most corn tortillas. The white corn ones at Kroger near the fresh made ones are edible, but still suck compared to flour.
I also learned flour tortillas are more or less and american invention.

it is just a northern Mexican thing, not necessarily American.
I knew first generation Mexicans that made flour over corn for a lot of dishes.

And then there's fajitas.

Many are too small. For flavor, I liked the fresh blue corn tortillas that Whole Foods used to carry. Haven't seen them in years, though.

Im still trying to find a good refried bean recipe. Nothing i have tried has come out tasting as good as id like.

Another thing I picked up is when eating fajitas, the meat and veg. are eaten with a fork or a small piece of tortilla torn off.
Corn tortillas are eaten with every meal just like we eat bread. The typical family will make enough in the morning to feed the family and all pets for the day.
Before going to Mexico I couldn't stand to eat a corn tortilla but after eating them made from scratch they are now my favorite.

First round last night. Definitely better than usual store bought, but not as good as Papacitos. They cook really fast. Very easy prep. I may try a Ghee wash on them next time.

Bump. Because of this thread i picked up Kroger brand and tortilla land. Kroger is definitely a little better in flavor and slightly thicker. Both are way better than normal store bought.
