Not sure what the guys are doing that don't like the taste, but if you eat venison wild pig is great. If it's hot I like to quarter the meat out and put it in a cooler with ice for a day or three. I've never had bad meat like this but I've never killed a big one either.
The smaller bits are great for sausage and I like to crockpot or smoke the bigger pieces of meat.

They all taste good and can't believe how many people are to lazy to clean what they shoot. I understand they are a nuisance but you can drop them off to the poor folks near by and they will take them all. No need to feed the coyotes.
Small one's you trap, raise in a pen and they are the best pork you will ever eat.
I grill the straps and crock pot the quarters. Never had one come out bad.
I have ate the sows up to 300 with no problem and we don't seem to get boars over 100 but they taste fine up to that point.
