I prefer the human error. It changes the way many pitchers attack the zone, depending on who is behind the plate at times.

If you set an exact strike zone it would make the pitchers' job much more difficult.

This. The pitcher/catcher and catcher/umpire relationship is a dynamic one and affects how a game is pitched and caught. Having that personality behind the plate adds to the game too. It would make a game seem more like watching someone play a video game.
