Cooked 2500 gallons this week for hospital week/nurses week. I'm putting the paddle down this weekend.

Honestly, there are so many good variations of jambalaya out there, I never really take cook offs too seriously. I like the sport of competition as much as the next guy, and even more so out of town, but locally I just like to try everyone's food, drink some cold beer, and make some new friends.
Trophies are nice, hell yeah.. but I hate stressing over stuff you can't really control (such as they judge's taste buds, and what they're looking for).
You gonna be out there?
