I'm trying to make a "trash" vegetable jambalaya

Does this sound appealing to you guys at all? Think John Folse's vegetable jambalaya recipe, but with quinoa (I know, I know)
the veggies would be purple hull peas, carrots, beet tops, and parsnip
garnish with broccoli flowers and carrot tops
basically I have a bunch of beets and carrots I'm trying to use from the garden to make way for my spring garden and my broccoli is going to seed and flowering right now and want to use the flowers for something before I pull them
also have some purple hull peas in the freezer that I need to use

This sounds appealing...but just under a different name
Calling it Jambalaya just isn't right

I like quinoa, just don't know if I can imagine those particular flavor combos. How did you decide on those?
ETA: I see why in your edit.

You could brown some seasoned seitan so you would have something with a meat texture in it.

I find carrot tops unbearably bitter.

This, unless you throw in a couple tomatoes.
I would eat it.

I was just going to fine chop them and use it as a garnish, kinda in place of parsley
I don't know, every time I chop them off I feel like I'm wasting them, though they do end up in my compost bin

Even as a garnish, it's a flavor I don't particularly like. No need to feel guilty for tossing parts you don't like...I wouldn't feel bad at all leaving broccoli flowers for the bees. They need to eat, too...and those brassica flowers are way too pungent for me.
If I had those ingredients, I'd take a completely different approach (and wouldn't bother with the quinoa, as I think it tastes like styrofoam packing peanuts). Cook the purplehull peas with a little smoked meat (or substitute smoked mushrooms, if you're vegan) and serve over rice (quinoa) as the entree, roast the parsnips & carrots as a side, and feed the carrot tops & broccoli flowers to the neighbor's chickens.
Or make a simple root veg stew w/peas, a little tomato, and plenty of garlic & onions, & serve over quinoa.
I would not apply the word jambalaya to "any old thing mixed w/a rice or grain".

this is what I always do, just looking to do something a little different

well the inspiration for this came from John Folse's vegetable jambalaya recipe in his cookbook "Can You Dig It", I would just substitute quinoa for the rice, which is my wife's fault, as she is the one that bought it and said "make something with this"

When my wife says use quinoa, I do half rice/ half quinoa.

Mix in some wild rice and pine nuts or pecans and call it a pilaf.
