I'm seeing now that vz is .270" vs my .250" stock grips. I'm wondering if there will be a noticeable difference that I'm looking for. I guess I'll have to look for a shop that has them in stock to see.

Most large firearm retailers regularly supply them. They're quite popular, and for a reason. You shouldn't have trouble finding some.
