Need ideas for a large bag of rice noodles

I have a large, one gallon bag of dry rice noodles (I guess it's rice noodles, crispy, light, zero flavor).
They were left over from a catered job today. I was getting ready to throw them away and figured I could make something of them.
I'm thinking crispy chocolate balls.
Any ideas?

If the noodles are thick maybe a pad thai, if it's thin a vegetable noodle stir fry. Something more complicated, thick: pho, thin: chargrilled pork vermicelli.
