Looking for a sweet and super spicy beef jerky marinade...

breaking out the dehydrator for the first time in a while, and am needing a recipe.

I always liked the Allegro marinades for jerky. Don't see why you couldn't add some brown sugar in until it tasted sweet.

thinking about adding a heaping portion of spicy asian chili oil to any marinade that i try. that should give it a kick.

Im soaking skirt steak in allegro fajita marinade right now. I bet it would make a great jerky marinade.
Use the dry Seasoning to get your heat. After marinade, drain the meat and toss with a black pepper based steak rub. Toss in red some red pepper flakes for spice.

Hi Mountain dry jerky seasoning makes a "Sweet and Spicy" flavor. Dry seasoning makes your dehydrator so much easier to clean after a batch. Amazon can have it at your house in 2 days, or Cabelas carries it.

Bass pro carries Backwoods brand jalapeño flavor marinade. It tastes incredible. Marinate for 24 hours with a healthy kick of liquid smoke and it is spicy. I have dusted it with cayenne after laying out in dehydrator and found it to be a little much. I strongly recommend this marinade.

I just got a dehydrator this week. (Presto 06301) Haven't used it yet. What's everyone's favorite cut of meat to use for jerky?

So I gave it a go.
Had 47oz of flank steak from Costco. ACtually bought a 4 lb pack but cooked a 16oz flank for dinner yesterday.
I searched and read about a lot of different recipes and this is a hybrid of a few I that I sorta combined.
Jerky Trial
3 lbs flank steak trimmed of fat and cut into strips
1/2 cup Allegro marinade
1/2 cup Szechuan Hot and Spicy marinade
1/4 cup Worcestershire
1 TBSP Liquid Smoke
2 tsp Sambal Oelek Chili Garlic Sauce
2 tsp black pepper
1 tsp minced garlic
1 tsp garlic powder
1 tsp onion powder
1 tsp red pepper flake
1/2 tsp chili powder
3 TBSP morton tenderquick curing salt
Set it to 4.5 hours at 165 setting. Next time I'll set to 4 hours or try lower temp.
USDA Choice Flank from Costco, $7/lb
Cut up. Some with grain, some against
Cure ingredients
Presto 06301 Dehydrator
Finished Product. I had eaten a few pieces for sampling, so lets call it 23 oz of beef jerky yielded from 47oz of raw flank steak.
Pleasantly surprised with the results. Had a nice spicy flavor. I was trying to avoid added sugar/carbs. My calculations show this to be 1-2g carbs per 1oz, compared to 5g-9g for all the commercial varieties.

my go to for sweet n spicy , if I want more heat I'll add ground smoked chipotle

That is the truth!! I used to eat Loves Truck stop jerky all the damn time thinking that it was premium!! When I started making it, I realized that all of the stuff you buy commercially is crap!

Looks good. 23 oz of jerky would last me a few days.

I started getting that thin cut beef from Walmart for my jerky. I think it's called masala or something. May be for Mexicans or something. Works just fine.

A couple times I put the meat in the smoker for about 30 minutes then to the dehydrator. Was damn good but added more work to it.

I've never had any good commercially made jerky, but after making it myself many times, the prices that they charge aren't out of line. It's time consuming and it's not cheap. I'd charge more if it were me.
As someone else said, backwoods is good stuff. You can buy it at Academy as well.
