My neighbor brought me a brined turkey to fry

It was still in the brine when he brought it over. I drained the brine, patted it dry with paper towels and lowered it into 350 degree grease. Long story short, it burned. I cooked mine two hours later, no brine, and it was great. Was it the brine? What should I have done differently? I felt bad but he brined it, not me.

Dude. It burned because you burned it, not cause of the brine.

Brine. Did it last year for the first time with brine. Mine didn't burn but was definitely much darker. It didn't taste burnt though. Must be some reaction with the sugars in the brine. Been frying turkeys for a long time and wont do that again. No brine this year and back to normal.

There was a lot of sugar/honey/apple juice or something sweet in the brine. Sugars don't hold up very well or for very long under intense heat.

And I would claim it was a farm fresh organic pastured heirloom turkey and was $4.00 lb and not the frozen Stop and Shop free turkey with $20 purchase.
