Concrete or have a custom butcher block top made. I had dirty top heart pine in one house and it came out very nice with about a dozen coats of sealer. A good carpenter or cabinet guy can make it and it is different.

I have granite now and it looks just like every other house built in the last 20 years. Ho hum.

I think you need food prep areas and food service areas, and since one surface rarely does everything a combination often looks and performs the best.
