Tried their Napoleonic Code Berliner Weisse at BREW a couple of years ago and it was quite drinkable. Not sure if they plan to have it in their permanent line up. Would be nice, though.

yep, New laws passed with the last legislative session should make it easier, but I agree it's definitely going to be tough.
You just get hammered on pricing on everything when you are such a small brewery.
I think the fermenters pictured are probably around $3K a piece assuming they are glycol jacketed conicals. That's tough when 3BBL/7BBL conicals are $5Kish and $6Kish respectively.

Some may not like many of the beers Bayou Teche puts out, but at least those guys keep trying new stuff and are nowhere near the Tin Roof category of basically just trying to make money simply off the craft insurgence.
BT comes out with different stuff on a regular basis, always trying something new. While there have definitely been some flops by them, I can say that Cocodrie, Loup Garou, and Miel Sauvage have been legit good beers.

Yeah, and when your revenue is based on volume, startup costs and direct costs kill you.
It would be cool, however, to have your own nano started, with something like that in your garage. But i don't have the scratch laying around to do that.

I'm not knocking them. They put out something like 20-30 different beers/year. They definitely are trying. I just haven't found one from them that i'd repeatedly buy, when there are so many other options out here.

Persimmon Sour is the clear, absolute worst beer I've ever had in my life. It's actually the worst thing I've ever had, food or beverage. Liquid, rotten garbage.
How did they not test multiple bottles before they hit distribution? Especially for a special release like your 5 year Anniversary? The lactobacillus here is doing horrid, infectious things to a base Berliner Weisse that seems to lack any integrity to begin with. Heavy off flavors of: DMS, isovaleric acid and butyric acid. The fruit was also not treated well and could be a contributing culprit.
The thing is, they got the label almost right: smells like that Opossum rummaging through garbage, but only if that Opossum died in the process.
Here's what I'm getting. Nose is immediately copious vomit then waves of hot garbage, Bogalusa Louisiana, prank stink bombs, decomposing animal carcasses, spoiled yogurt or ranch dressing, farts, sweaty feet, moldy fruit, a festering sewer, rotten Stilton cheese and rotten butter.
Can you believe what I'm about to say next? I actually tasted it, twice! And that decision is a regrettable one. Tasted like a liquid landfill.
A few hours before trying the Persimmon Sour, I had Bayou Teche Saison D’Écrevisses with some boiled crawfish that paired well and was sessionable. After the Persimmon Sour I was lucky to have a Bayou Teche Coteau Rodaire near by to rinse my mouth out from the residual vomit. No, not only vomit-like flavors but real, actual vomit. I literally threw up after tasting the Persimmon Sour; the first time that has ever happened after trying any beer for the first time. The worst beer experience of my life.
ETA: I agree, that BT does some things really well. I just enjoy this review.

plus their ba saison and peach ipa are both good.
