I used to call on the Pappas organization. The execute at a very high level for a chain operator. They make literally everything completely from scratch... They make their own mayonnaise in house. They make the buns at Pappas Burger from scratch. They grind the beef fresh in house.
The steak fajitas and tableside guac at Pappacitos is some fine eating... You're full of shite if you say otherwise.
I ate at the steak house in Dallas and it's among the best dining experiences I've ever had.

I still like the bone-in ribeye at Vic and Anthony's more, but Pappas' overall food and experience is better.
That's said, the ribeye for two at Pax Americana is the best steak in Houston...

There was mention about Pappadeauxs opening in Baton Rouge a few years ago and I told them it would be the best "cajun" restaurant in town if it did

I don't care much for Pappadeaux's. Chunks of celery and tomatoes in the gumbo, huge arse bread with too few shrimp on the poboy, no thank you. Hell, I think Floyd's and especially BB's is better.
However, all these reviews on the steakhouse now have me wishing the wife and I had gone there a couple weeks ago instead of Brenner's on the Bayou. It wasn't bad, and service is really good, but I was a bit underwhelmed by the steak. The wife's shrimp and grits was amazing.

Pappadeaux is very good
All of the pappas restaurants are great. Pappasitos fajitas and salsa are amazing

They're a family owned, private company. Nothing franchised and all restaurants ultimately overseen by someone within the Pappas family. I'm not sure how you can call it a chain?

I just don't understand this. I can not be the luckiest guy in Houston with regards to the steaks there, time and time again.
I'm not calling you out. It's not the first time I've seen that same review. I love their steaks.

anyone who bashes bc it's a chain is trying too hard to chain bash. There is a difference between a locally owned chain vs a national chain.

this is true. when we went i didnt see anyone on the staff other than the hostess's under 35.
most of the male waiters were over 45 and knew their shite

Luckily, I get the opportunity to eat at all of these steakhouses entirely too often. Pappas will be a great addition to downtown. I definitely prefer it over anything Fertitta owns. Having said that, I suggest a meal at Nick & Sam's when in Dallas. That steakhouse is the only thing Dallas does better than Houston.

I've only been to B on Bayou twice, and only once for a sit down where I ordered a steak. Other food was very good, and the steak was not bad at all. I guess as good as the finger food was that I had at an event a while back, I had my expectations set way high on the fillet. I still ate every single bite.

I agree with this. I've never actually been to the restaurant, but my company has ordered catering from them and the steak fajitas have been fantastic.
But I'm going to disagree that Pappadeauxs is "very good".
