Where to stay and what to do in Galveston?

Heading there for the first time for work. Hotel prices are incredibly cheap which makes it a bit more difficult to pinpoint the better places to stay. As always, being able to walk to dinner instead of driving is always preferred. I guess that hurricane destroyed that cool looking Polynesian place on the water?
Any recommendations?

Stay at the San Luis, eat at Watermans and Michael Burger

San Luis hotel if your company will swing it.
Moody Gardens is neat.
East Beach is nice if you want to hit the beach.
A lot of people go to the Pleasure Pier. Personally, I despise the Landry's chain... but obviously a lot of people support them.
Millers is good to eat... The Spot is a fun little place as well to eat.
Otherwise, Galveston is more of a family place. Take the kids to the beach, etc.
If you can do it, on your drive to Houston, go to NASA. The JSC is pretty neat.

I was down there in March and stayed at the Doubletree along the Seawall. It's newly remodeled and was awesome. I felt like I was the first person to ever walk in the room it was so clean. Also they had free bikes you could use to ride around the city. Places normally charge for those.
Only negative was that the pool isn't heated. If you're going down there now it shouldn't be an issue as it's much warmer now.

Eat at smooth Tony's.
Own during week only for lunch and Thursday/Friday night food and a small band. Its awesome. Burgers are fricking delicious

Do not go to The Spot to eat like suggested. Only if you want drinks.
Farley Girls is a great little cafe. Its down on the east side of the island.
Brews Brothers has the best beer selection on the island. Its on The Strand and also has good wings and beer.
The Strand is sort of their downtown main street. I would definitely go there if you're only there a day. Plenty of shops on and off the street.
To be honest, I would avoid the beach if you're only there a day.
If kids in tow, Moody Gardens.
If not, stay away from the pier and beach and anything that sounds very kid/touristy.
Original Mexican cafe is good sloppy Mexican. Bronco Burrito for breakfast Mexican. Its a small short order place but its packed every morning. Just get the burrito.
Pho Tai for Vietnamese. Its on Broadway and I think 38th street. Vermicelli bowls are killer. Also a good taqueria across the street from it.
Henrys on Broadway for dirty no one speaks English taqueria. This is just if you want good Mexican but want to feel uncomfortable with the locals lurking about
