Cobia is wonderful.
Redfish is too.
I don't really grill tuna as I prefer to just sear it lightning quick, and getting coals going for just that seems like a waste.

Got a whole snapper and some tuna last weekend. Scaled snapper, scored it, studfed it with shallot, lemon, and cilantro. Grilled it and sauced it with a sauce of chili garlic sauce, fresh orange juice, and olive oil. With some cilantro on top. LINK
The tuna I lightly poached in some olive oil, lemon zest, juice, and butter. Like a minute or so per side. Then let it cool in poaching liquid off heat. Sliced and sauced with poaching liquid with some Dorignac's olive salad added. LINK
