Getting a new set of knives: Chicago Cutlery or Calphalon?

Calphalon a bit more expensive but the brand has never let me down.

CC-read good reviews about them but have never used them.

Which should I go with?

My favorite butcher knife is a 43 year old Chicago Cutlery carbon steel, wood handled, 8 inch boner. About ten years ago, I put on a pair of rubber gloves and rubbed epoxy into the wood because it was falling apart. Has worked great so far.

My mom has exactly the same knife, purchased by my dad in 1955. Well, almost exactly - the blade on her knife has been almost sharpened away. It will still take an edge you can shave with.

I have some old Chicago and they are ok. I have a bunch of Dexter Russell which are cheap and good. I've got a bunch of Cutco and I'd suggest that.

I have some Chicago Cutlery and they are pretty good knives. If you buy them, also get the Chicago Cutlery Easy Steel (product #78000). It is the best way to sharpen that low carbon steel.

I would go with either one of those for paring knives and bread knives, but get one really great Japanese or German Chefs knife.

don't buy a set...
I just bought a japanese chef's knife from chefknivestogo. its a pretty badass knife and paid way less than you would think for a quality knife and steel.
