I don't know if they go this way or not, just thinking of possible directions.
Stannis wasn't any more crippled than a lot of characters after a major fight. He was beaten up and tired, but not hamstrung (he moved well enough to kill those last two soldiers). He didn't get any more injured than, say, Jorah in the pit, who was moving around pretty well the next episode. In fact, didn't Jorah even get the same "slash to the leg" type blow? I'm guessing Westerosi leather armor at the legs would be the official explanation, but I'd say leg slashes are meant to be dramatic non-lethal blows, to show us the guy is in increasing trouble.
Just figuring possible moves in the plot. If Stannis survives, it serves to keep Mel (and anyone with her) away from him at all costs, because she knows he would end her.

Going another direction, what about Doran's son? Do Jaime and Bronn toss his arse overboard? Does he turn against his house in order to kill his aunt (he was in love with Myrcella)?
For that matter, what about Doran- she kissed his ring. I assume there was some slobber on his hand, he might have had a fatal nosebleed too. And with his son out of the way, does she now run Dorne?

This would be a dumbass political move. Why would they get rid of someone that valuable. I believe Trystane is the heir to Dorne (in the show). Killing him would be as dumb as killing Myrcella (that sand whore is stupid).

His story is secluded, it doesn't redirect any current storylines besides the wall.

for fans to say "What If" when Martin finishes the books with the WWers running through the whole world. and the series ending with them winning.
One thing to watch is what happens to Jorah; he's got greyscale now. He's doomed to die, unless someone knows how to cure it. Stannis was able to cure Shireen, he could be of assistance ... but now Stannis, Shireen and the rest of the Baratheons are done. So, if Jorah dies from this, we will have seen he could have been saved, if only the right people came together.
Maybe it all plays out like this.

There's no cure. You can only stop it from spreading and infecting others. Curing means it goes away.
