Borgne in the Hyatt Regency in NOLA is pretty good

restaurant r'evolution At the royal sonesta in New Orleans is very high up there. New Orleans hotel restaurants or on a whole 'nother level.

All the high end places in Vegas are technically hotel restaurants

Pretty much. The tourist trade and the deals hotels are willing to make with restaurateurs (mainly chef/owners) make a difference.

One Eleven at the Capital Hotel in Little Rock is really good (though I prefer the Capital Bar and Grill).
The Hive at 21C in Bentonville, Arkansas is also solid (though I prefer Tusk and Trotter if I'm eating in Bentonville)
Both chefs are semifinalists for the James Beard this year.
