Sending out evite this week for a party for my wife's birthday/house warming party at our house
Expecting anywhere from 25-40 people to show up
We were going to cook out and provide main dishes and ask people to bring sides and dessert.
What's a good idea for that many people? Brisket?
I tbought about doing a large brisket, pulled pork sliders and 4-5 racks of ribs

I'd cook everything, people can byob if you want them to bring something. Get some butter lettuce so people can choose that or bread for the pulled pork. I'd go small plate food rather than anything sit down. One signature drink and an ice chest of beer. Make your three best dips, some meatballs maybe...roast up some veggies.

pork shoulder, brisket and ribs should be plenty enough and a good variety

Agree that you should provide mains & sides. If it's a party celebrating your new house, you can afford to feed people; time to stop outsourcing your party expenses to others. With a group that big, the menu quickly can become a train wreck of duplicate dishes or jarringly incompatible flavors.
Potato salad & baked beans are inexpensive for a crowd and can easily be made the evening before. Ditto for a chopped salad and/or deviled eggs.
If your social circle is really into potlucks, then let 'em bring desserts. Or if your best-best friend insists on helping, then assign him/her a specific thing (like the potato salad).
In any event, tell people upfront that it's a potluck so they can decline if they don't have the time or inclination to cook BEFORE they accept the invitation. Can't tell you how many times I've said "sure, would love to attend" and then find out I'm supposed to bring something I have absolutely no time to make. (Can you tell it's a pet peeve? LOL)

Maybe add in one chicken item just in case you have someone who doesn't eat pork or beef.
Maybe chicken wings(drumettes and wingettes) on the grill? Easy to grill, and a great party finger-food ... would go well with the sliders ...

Yeah I should have mentioned we are a big group of friends and do this sort of stuff all the time. people always bring stuff either way
Yeah I can do sides. Any ideas?
Homemade baracho beans for sure, maybe some zoeys slaw and some chips and dips for sure. Also some Costco meatballs or stuffed mushrooms, etc
My pulled pork is pretty damn good and always a hit. Smoke it for an hour and then finish in crock pot with bottle of root beer. Soo good
Served with Hawaiian rolls

I like slaw as a BBQ side. The vegetarian leaning can make a meal out of beans & slaw. Or you can put it on a Hawaiian roll w/the pulled pork.
It's nice to have some fresh, light, slightly acid counterpoints to the pulled pork. Too early in the season for a big platter of sliced tomatoes, but perhaps a quick zucchini or cucumber pickle? Cut into spears, serve chilled. Like this: homesick texan pickled zucchini

I'd say no to brisket and ribs. Unless you're really good with your equipment
