Question about cooking ribs Peel membrane every time and wouldn't dare boil meat I am wanting to put a smoke flavor on low and slow. I peel the membrane by using a knife to pull an edge away and then finish peeling away with a paper towel. Works really fast and easy. You must do it to speed up the cook time but I would think you don't gain a full smoked flavor???
Thanks! I will try your method of removing the membrane.
I cut the rack into thirds and boil the ribs to speed up the cook time. I then peel off the membrane and put a dry rub on them and place them in zip loc bags for a couple of hours. Placing them in zip loc bags keeps them from drying out. I then place them on the smoker using pecan or apple wood chunks for a couple of hours. The ribs absorb smoke just fine. I have gotten compliments from everyone that has eaten them. Besides, too much smoke gives me heartburn or indigestion these days.

For me, if the meat is falling off the bone, what's the point of cooking ribs? Just overcook pork and enjoy.
Meh, fall off the bone definitely has it's place in the smoking world. It's still delicious.
But normally what I do is just make a rack that isn't fall off the bone, eat those, and then use the leftovers from the fall off the bone to make pulled pork sandwiches the next day.
Win/win scenarios rule

How long do you cook your ribs if you don't boil them? I want them tender and falling off the bone. Also, do you use a dry rub and apply it a couple of hours before you put it on the smoker?

BBQ cooks fight about this almost as much as they fight about fat cap up or fat cap down!
If the rib is cooked right, there's very little difference in texture, tenderness, moistness, etc. whether you leave the membrane on or take it off. Leaving it on or taking it off does little to determine if it's falling off the bone or bite through tender. You can get either whether it's on or off.
Taking it off is pretty simple using the butter knife and paper towel method mentioned above. I used to always pull the membrane because that is how I was initially taught. Now, depending on my time frame, the number of ribs I'm cooking, etc. I might pull it and I might not.
Here's a photo of 14 racks that I cooked for the Super Bowl:

I was running late and left the membrane on. Nobody complained.
And...boiling ribs should be a bannable offense!

Yeah, I use a rub. I prefer my own and not store bought, but just don't over-do the rub on the ribs. I put them on generally an hour or two before they go on the smoker.
