I love leeks. You can save the green tough tops for stock. Soup looks very good. The bread looks perfect especially for dipping into that good broth.

Leeks are a nice winter soup ingredient, especially with potatoes (I know taters are not a big time favorite ingredient for you)

Nice rainy day soup for us.
