And Chang is always trying to be polarizing and iconoclastic. It's part of his schtick. There's a great conversation between he, Bourdain, and (I think), Wylie where they're talking about farm to table. And they're just bashing the whole movement and ridiculing the shite out of it. Then they all admit that, of course, they want farm to table ingredients.

So yeah, he's basically a hipster (and I love the guy) who wants to buck whatever the current trend is.

Played out in NYC, just sort of came on the scene within the past year or so in N.O., therefore, it's got about 2-3 more years before you will be able to find it in BR.

Chang is starting to rub me the wrong way. Realllly embracing the elitist east coast attitude. I still worship him he is just coming off a little too pretentious to me lately.

Putting a egg in it? Wow. I have been adding all kinds of different foods to it since I was a kid.
I'm def not paying $16 for a bowl.

It's a cheap meal. It's not supposed to be ridiculously priced. Maybe I'm Asian and cheap but I don't like the trendy fad pho and ramen places.

Pho is supposed to be a cheap good meal.. Not over $10 a bowl. That's ridiculous. I'm glad I live in Houston where the hole in the wall places have the best for $6 a bowl.

Kudos to him for building the trend on it and capitalizing.. He sounds bitter about it.

I kinda think thats Chang's point (to the masses, at least)...

Obviously he's very passionate about Ramen, since its the foundation of his empire... Personally, I have never been that passionate about a soup(s)

I've had a pretty good bowl of Ramen at the 9 Dragon Noodle House by the Neighborhood Walmart on Highland.

A good bowl of ramen in the south is few and far between. However, when you do find a good bowl, it will make you realize what all the hubbub is about.
This is just Chang being Chang. He's been around bourdain too much, not to mention the cynicism you develop in the restaurant game
