And there are a lot of those points in the Harry Potter series.
Their whole economy and caste system makes little to no sense at all. How could the Weasleys be poor if you can just magik up whatever you want? How does an economy survive when they only people that don't work for the government are bartenders and novelty store owners?

The economy is fine. We only see a small part of the wizarding world. The Weasleys are poor probably because they don't whip up a condom spell and have 7 children. The mother doesn't work and all of their children go to a fancy private school. Even if the school itself is free, all the books and stuff add up.
Not sure where you get the idea that they're all bartenders and novelty store owners. Again, we only see a small part of the world. We see mainly (outside of Hogwarts) Hogsmead and Diagon Alley. Diagon Alley is a shopping district. Of course people will have a lot of shops. And Hogsmead is a tourist trap designed to part students from their money.

You cant just magically whip up money. The goblins at Gringots have that shite on lock. Only they can do it and they are a noble bunch.

Teachers at the school, people in the muggle world, people that work in the production facilities where textbooks and shite are created. In a sense, because wizards dont use machines, there are more manual labor jobs in the wizarding world. Except instead of lifting boxes they are wingardium levisoing boxes.

First of all, I made a thread about the wizard economy awhile back, you should go read it, I agree some of it doesn't make a whole lot of sense, but at the end of the day they are basically a Socialist economy, or perhaps an Oligarchy.
Second, yes JK Rowling made the Snitch worth WAY too much. It is clear she does not know much about sports, and just wanted a way to make Harry important, she should have made it worth 50 points, or made goals with the Quaffle worth 25.
Third, I love Harry Potter, I'm not ashamed to admit it's my favorite book series, but yes she did write herself into some plot holes. The largest plot hole clearly, and really the only one I have a major issue with is the time turner. She never should have introduced the ability to travel back into time in the series. There is no answer to the question of "Why didn't Dumbledore just use a Time Turner to go back in time and kill Voldemort?". And then she writes a little paragraph saying that OH all the Time Turners were destroyed in the battle at the ministry in the Order of the Phoenix, and they can't or won't make any more. YEA, OKAY
