You could buy cellophane-wrapped burger patties languishing on styrofoam trays at your neighborhood supermarket. But are you serious—like really serious—about hamburgers? Then it’s about time you head to your local butcher shop and work with the staff to create a custom burger blend.

They left out the step where you add the egg and breadcrumb.

I kid. I use 80/20 ground chuck, salt and pepper. Cook on a screaming hot cast iron skillet.

“If you want a good burger, 70/30 is definitely the way to go,” says Mylan. He explains that 30% fat is ideal if you want to cook your burger anywhere from medium-rare to medium-well.

100% agree with him. LOVE 70/30.

The brisket burgers I make are better than any other type.

Good article.

Funny how we know most of these tips as common sense here, but I see people wayyyyy over-handling their meat, buying lean meats, smashing the shite out of the patties, etc. all the time.

As a child, I thought I hated "homemade hamburgers", but it turns out I just hated the way most people make them.

I use 60% Spicy Beef Kuftka and 40% ground lamb for my specialty burgers.

Buy both in the Halal market.
