Sweet potato recipes

Recently discovered that I really like sweet potatoes. The thing is I've only had them a fries and in pies and I'd like to expand beyond that. So of course my first stop is to tap the knowledge of the FDB. Really not looking for dessert recipes but I'd love to hear what else you have. TIA

cut them into squares, top with salt, pepper and rosemary, bake in oven

I roast them quite often similar to what CE said. You can stuff them, make soup/bisque with them, cook gratin style. They make a terrific sauce of sorts sliced, baked in heavy cream with parm cheese. Takes a while, but the end result is mighty tasty particularly with fresh Louisiana sweet potatoes.

Sweet Potato Pancakes

Wrap a sweet potato or 4 individually in foil withn a pat of butter and bake for 45 mins to an hour at 350. You should easily be able to stick a knife or fork in the potato.

Mash the baked sweet potato well, with a fork. You can also throw in a mashed banana.
Make pancake mix according to instructions on the box for 4 or 6 (I like whole wheat pancake mix) and add the sweet potato.

Cook pancakes according to instructions on the box.

cut them into squares...................mix olive oil and honey and coat them in this mixture.

place them onto a baking sheet and sprinkle with salt and a dash of cinnamon................put in oven @ 400* for about 20-30 minutes depending on size of cubes.

Replace half the russets or reds in you favorite potato salad recipe with sweet potatoes.

sweet potato casserole.

I never make it, but its a staple around here around the holidays. I know it involves brown sugar, nutmeg, cinnamon., butter. topped with marshmellows (baked in oven)
