The wife and I went to an all-inclusive resort at Iberostar's Rose Hall Beach Hotel in Montego Bay, Jamaica, that was pretty good.
The travel depends on how direct a flight you're getting, as we went from NOLA to Charlotte to Montego Bay, due to flying United, but we were at the hotel within about 10 hours. (6AM flight from NOLA, in hotel by 3-4 PM)
Just be forewarned that customs and immigration is a bitch of a line there, as several planes will disembark in a short time frame and back things up.
There was activity on the beach, such as a wedding taking place within view of our balcony, but it wasn't a crazy Spring Break party going on despite it being in the Spring Break timeframe (early March).

Her and I have done the scuba, zip lining, charter boat thing. We want to do nothing but sit on the beach drinking in peace and having sex a lot hopefully within very, very close proximity to the beach in the place we stay.
My dream would be to walk out of the room onto the beach basically. And it have gorgeous water and a wait staff for beverages and food.

It sounds like any of the Sandals resorts on St Lucia would work well for you. Look into them. I had a friend do the butler thing and loved it.

Canneel Bay is going to be your only option in St. John for that.
Scrub Island in the BVI's...
Most of the Villas in St. John are built up into the hills so you can have the view, then take your 4x4 down to the isolated beach of your choice. Trunk Bay is the only one that's ever crowded...

I visited one for a friend's wedding. It was ok but nothing special. You can get a much better bang for your buck in other places. The butler service really pushes the prices up, for a week with a butler you are looking at $8k+, you can get A LOT for that kind of money in other places...

Had friends stay at cap Maison. They enjoyed it. They split it between there and Laderra. You are picking spots away from the Pitons. I'd recommend the other side of the island for scenery.
