My Shameful Love of Brown Truckstop Food (Photos)

The wife has left me for a few hours of "ladies night out" tonight. I think they drink adult beverages and then go yard rolling. She has a fast car, so I have always assumed that she drives getaway. I am a good husband. I don't ask too many questions.
With her gone, I sadly have fallen back into bad habits that are documented in this photo-post. It should surprise no one that I have an unhealthy fondness for brown truck stop food, so here it is. If this isn't truck stop food, it certainly needs to be if they expect to get my business.
Gravy smothered cube steak with whipped potatoes and roasted corn.
I started with a couple of cube steaks ($2.25), a medium and small red potato ($0.80) and ear of yellow corn ($1.00) an onion ($0.30), 3 Tablespoons of flour, 2 Tablespoons of vegetable oil, a Tablespoon of butter, a teaspoon of better than beef, garlic salt, pepper and a splash of red wine ($1.00). Total cost of the meal = $5.35.
plus $0.50 for my diet Dr. Pepper. = $5.85
I cleaned the corn, salted it and added a little butter, wrapped it in foil and roasted for about 45 minutes at 400 F.
I peeled, cut up and boiled my red potatoes with a half teaspoon of salt then mashed them with some butter and a touch of milk. Lots of pepper finished them. I am a little funny in that I like just a few lumps in my smashed taters.
For my cube steaks, I seasoned them with black pepper, garlic salt and then lightly breaded them.
As soon as the sauté pan heated up the guys were added and quickly cooked.
I removed them, browned a little flour and added a few slices of onion.
Then some water along with a spoon of "Better Than Beef" bullion paste.
then added the cube steaks back in to simmer for a while.
Oh and a little wine because brown gravy sounds better with a little wine.
I simmered my steaks in the gravy for about 30 minutes to build flavor and thicken the brown, then plated my dinner.
Time to eat.

It's cube steak brah. It always looks like an already chewed piece of meat. I hate the look but I love the way it accepts batter and fries!

Two Tablespoons of Vegetable oil. hot enough to sizzle as soon as the floured cube steaks were placed in the pan.
I could have batter coated them and achieved a country fried steak. That wasn't what I wanted, so I only lightly floured them and most of it cooked off as they heated up. What you see floating around in the oil is the flour and liquid from the beef cooking off.

One night I'll go do a photo review of the Truckway Plaza Truck Stop at exit 129 (Lost Gap / Meehan Junction) on I-20 just west of Meridian. It is right across old US-80 from the Prison and is authentic with no pretense. It has to be a night I can strip down in the garage and get my clothes into the washer as soon as I get home. The deep fryer smell gets into the fabric right away when you visit that place.
Queen City - across I-20 from the Meridian Airport is ok too.

Always appreciate your posts on here, but I got to thinking. When is the last time you and your wife had a decent meal out? I have the perception that you spend more time in the kitchen that any person I know, which is not a bad thing.
And how tough of a critic are you on the chef, if you do venture out of your own domain to eat food.
