I have and it'stunning. Go in June or July if possible as the sun never sets during the summer. So much to do and see and the women are gorgeous.

LOTR filmed in New Zealand. The new movie "The Secret Life of Walter Mitty" has some pretty cool scenes of Iceland.

Iceland is a lot like the Alaska Peninsula or the Aleutians, just more populated.

September should be an awesome time to go, in that the roads aren't completely fricked yet due to weather but still a shitload of daylight. May have some early Northern Lights sightings.
I don't know how adventurous your wife is, but the main reason I'd always wanted to go to Iceland is the landscape. A lot of regions are easily accessible by bus(I'd think they're still running early September-would look into it), and don't need a tour guide. However, tourism is huge there and tours can easily be found. It's an expensive country so expect many day tours to be the low triple digit range. Driving these roads can be done, but need a 4x4. Some rental companies specify roads that can't be driven on with their vehicles and fine the shite out of you if you don't abide. Keep a note of that.
Places to look into(note, a lot of this is probably terribly spelled):
Landmannalageur
Thorsmark(actually have a hiking trail between the two that should take 3-4 days. I spent time in both regions but couldn't do the trail since I went in early season. Some of the most beautiful area I've ever been. Accomodations in Thorsmark is pretty reasonable at a place called Volcano Huts)
Golden Circle-They offer tours for this but it can easily be done by car. Takes about 4 hours or so and roads are all highways. Gulfoss/Geysir/and the tectonic plate which separates the european and asian tectonic plate can't remember it's name.
Skaftafell-Didn't have enough time to go here. Really wanted to. Think it can be easily reached by highway one. A good base to find a way to the lagoon. Imagine there's buses that go there.
Blue Lagoon-Didn't go. Big tourist attraction.
Reykavik- Bars in Reykavik on the weekend get pretty crazy. Open all night. Icelandic people are a different breed.
Southern Coast- Hopped in with a random group one day who drove some down the coast. Two major waterfalls are here. Drove to some town with thermal springs.
Food in Reykavik is good but expensive as crap. Found some place by the opera house that was reasonable. Whale was fricking awesome. For other restaurants just use tripadvisor. No idea.

Went two summers ago, accommodations limited. After a day you will be wanting to be somewhere else. Prague is so much better.
