My mom always pressure cooked for awhile, used a batter similar to chicken batter, salt and pepper, scramble some eggs and made made a pan of cathead biscuits. No leftovers for sure. ![](https://images.tigerdroppings.com/Images/Icons/Iconbow.gif)

Smothered with white beans and rice is my favorite

Try a Sauce Piquante. Start the same as you described, but after roux is done....add one 16 oz can of tomato sauce and shake in a good bit of Worcestershire sauce. Add bell pepper. Brown some sausage separately and add that also. Add rabbit after it has been cooking awhile. Cook until tender and serve over white rice with garlic bread and salad.

Forget the roux. Just smother those bad boys until the meat starts to fall off the bone. Mmmmmmmmm.
That with a side of white beans and rice...is it lunch time yet?

Had anybody mentioned rabbit & dumplings? It was a staple at my house when I was a kid and my dad had beagles.
Quick side note, the old man had a car and not a truck for a while and would carry the dogs in the trunk. No bullshite.

It's amazing how certain childhood memories stick with you as you get older.
When I was maybe 12, my great uncle and I went hunting, unsuccessfully. On the way back home, the car in front of us hit a rabbit - my uncle promptly stopped and picked it up. Then he went into the woods and came out with an armful of mushrooms.
Smothered the rabbit with plenty of onions, mushrooms, and red wine. That was one of the best meals I've ever had.

If they were shot (wild, not farm raised) be careful with the pellets so you don't break a tooth.
Also, if you carry beagles in a car trunk when hunting don't put a sling blade in the trunk. A dog can cut the pad on its paw and make a pretty bloody mess!

That's my CSB I guess...if you cook the right kind of rabbit the right way then it's pretty tough to beat

Got a couple cooking down in a gumbo right now. Didn't have time to smoke 'em though. Wish I had, but didn't plan for it.

Brown it and make a gravy and add a half a can of cream of mushroom. You will not believe how well it compliments it and doesn't liten the gravy either.

Drop them in a spaghetti gravy.
