75 Holiday Appetizers (Recipes)

I needed this for my company's Thanksgiving lunch next week

Looking at these make me feel like I died and went to appetizer heaven.. If we're talking apps, this very easy recipe comes from Molly O'Neill's "New York Cookbook":
Spinach Balls
2 packages frozen chopped spinach, thawed and drained
2 cups plain Pepperidge Farm stuffing
1 onion chopped
4 eggs beaten
8 tablespoons (1 stick) unsalted butter, melted
½ cup freshly grated Parmesan cheese
1. Preheat the oven to 375 degrees.
2. Combine all the ingredients in a large bowl.
Form the mixture into bite-size balls and place
on a baking sheet. Bake until heated through, about 20 minutes. Serve either as an appetizer or side dish.
(The spinach balls can be frozen on the baking sheet. Defrost for 20 minutes before baking
as above.)
Makes about 36, serves 6

That's one of those old Junior League type recipes that I loved. I would scarf up a few of those.

Indeed.. And I bet a little cube of Gruyere stuffed in the center wouldn't hurt anything..
