I breaded some chicken breasts and pan fried them in coconut oil.
Chopped up some garlic, ginger, bell peppers, portabellas, broccoli, red onions, pineapple, and mango. Threw it all in a casserole dish with honey and soy sauce and cooked in the oven for about 20 minutes.
Served it all on a bed of quinoa.

Red beans and rice, French bread and chilled Grape Propel Water.
Went to the Pig after dinner to purchase green peppers for chicken and shrimp gumbo for Friday night and frozen biscuits, Conecuh sausage and muffin mix for Saturday Breakfast for our weekend guests. Rest of menu is open. Maybe Catfish at Chunky River and Shrimp Poboys at Seafood Express.
Our guests are coming for the Soule Steam Festival in Meridian this weekend. I will be the white haired old fart that everyone knows. May also take them across town to ride the fastest and oldest carousel in Mississippi.

If you come, bring money. It costs $0.50 to ride the carousel, which is a genuine Denzel with hand carved wooden Denzel horses and the only Denzel Carousel house in existence - worth over two million dollars. Always struck me as strange to hop onto a hundred year old carved horse worth about a hundred thousand dollars. They have popcorn and cotton candy, so I plan on treating our guests like the kids they once were.
