What to season fish\chicken with?!

Hey I've never posted here and I am obviously a noob to cooking anything. I'm trying to start eating healthier and cooking some meats so I was just wondering what you guys would use to season some fish (also what type of fish would be lean\delicious??) or chicken?? salt? pepper? lemon pepper? tonys?? what to do!!!
I plan on baking it in the oven so any other advice would be nice as well like.. how long to bake and what degree should I cook it at for best results??

For chicken, I like a lemon juice/pepper, but I usually wing it (pun intended) with spices I have on hand.
I am very picky when it comes to fish, so I will usually just do some tilapia fillets in Italian dressing w/ crushed red pepper and other spices, and top w/ a little parmesan when I plate.

Check this place out daily. There are some really good cooks here. Great ideas are posted just about everyday. If you look up top, the recipe thread can be saved to your computer.
Some of these folks are really fancy, and that's good. Some like simpler things. The best way I have found to get ideas is in the WFDT threads. That translates to, "What's for dinner tonight?"

"Dinner is at Noon. Supper is in the Evening. These people are morons!"
Just let it go.
They eat regular food everyday. Pop in there and ask them how they made it, or where they got the recipe.

Of all the seasonings mixes I've tried, I like LeBlanc's from the AP best. Not as salty as Tony's and some of the others. I also use a salt-free version from Benoits across the river and manage my own salt.

I use paula deens house seasoning + paprika for boneless skinless breast/thighs. Put on a moderate amount, add a touch (1/4 cup) of chick broth and cover with foil. Bake at 350 for about 35 minutes. Moist and tasty.
To give some unhealthy variety, use the recipe above and when finished, top chicken with a squirt of lime juice, kraft bbq sauce, a couple slices of precooked bacon, and shredded cheese and then throw it back under the broiler. 5 minutes later, you have chilis monterey chicken. Easy peasy japaneesy!

If you're a salmon eater, google slow roasted salmon. It's easy and buttery in texture. A yogurt dill simple sauce goes very well on it.
Try chicken tenders raw and unbattered rather than breasts. They're not dry and very forgiving. A simple purée of roasted red bell pepper goes well on baked chicken.

I like to just pepper or lemon pepper with fish.

Paul Prudhomme has a line of seasoning mixes designed for different proteins/dishes. The poultry, seafood, and vegetable are all used in my kitchen regularly.

Thanks for all the advice guys. Looks like I need to take a trip to the store and stock up on some seasonings lol.
Yeah I was thinking about using a skillet as well but all I have is a pan right now. Maybe I'll get one in the near future.
