trying to figure out what's wrong with these shrimp

ETA: He's selling them thawed. So, now how can I cook them without them turning into mealey mush?
bought shrimp from a shrimper (he came to the house). The shrimp don't have heads, are fresh looking, don't smell, but turn to total mush and are mealy when they're boiled. They are not over cooked.
Haven't fried them, so don't know who they'd do then.
Trying to figure out what's wrong with them. Could he be thawing them before selling? Bought a lot, so we froze them.

Sounds like a classic case of freeze/thaw, freeze/thaw, freeze/thaw.

Absolutely. If you are not smack dab in shrimp season, you have IQF shrimp that have been thawed. That sucks and is one of many reasons I try to buy fresh and eat fresh.

Taking the heads off the shrimp delays spoilage. For maximum freshness find shrimp with the heads still on that are firm, have good color and no odor..

Those IQF shrimp are good if you don't refreeze them. Just buy enough to cook dinner for the night and you'll be fine.

Agreed--the IQF are a pretty good product. Just don't refreeze. Most of the shell-on shrimp sold in stores is defrosted IQF....so if you buy shrimp at Whole Foods, Rouse's, etc, don't refreeze it.

why don't you do stew, creole or etoufee', I think that woulf be the best way to use them.
