I've never had this issue. I've grilled them and roasted them. I usually do thick slices with olive oil and s&p. I recall reading, however, that there's an ingredient in beets to which some folks are very sensitive that makes them more earthy, I think. It might be somewhat like cilantro. Some folks love it like myself. Some folks like my Mom think it tastes like soap.

I've never had the problem either, however I don't buy large ones. Its really not beet season yet, its a cole vegetable.You can roast or boil them. Next time try a little butter on them, hot. Tastes like corn on the cob. When they're in season we eat them hot and cold, we love 'em
