a cup of black coffee, mexican chocolate and a mix of guajillo, new mexico, ancho, arbol peppers that I've made into a paste. I won a local chili cook off with that stuff.

Are we talking traditional with/without beans, white, meatless, etc. My wife makes some awesome chili, have to admit I like green chile chicken stew moreso than traditional chili.

That's impressive, but not like my pepper and rub collection.... . I see commonalities in the collection, tho.
Penzey's is not cheap, but the 9000 and other two are worth the money in my book. I smoke and grind my own peppers now, but the PZ chipotle is an easy way to go for high quality.

I'm ashamed to say that I have too many that go unused. I keep reaching for the same ones, over and over. I do have the chipotle as well as some others not pictured. The 9000 is in a different cabinet. It's too big for this one which is usually much messier. I must have straightened it to snap the pic.

I bought some of that chili 9000 on your recommendation. I haven't made chili with it yet but will within a month. I have to have some frozen before it starts getting cold. I did taste the 9000 when it came in though. It's got a great flavor.

I've honestly never used the powdered galangal. I go to the Asian grocery and get fresh when I need it. I don't think it's like ginger at all, other than a similar look. It's sort of woody tasting. Not sure how to describe it. Ginger has bite, I don't think of galangal that way.
