I haven't been able to find the yeast I want to use, so I contacted White Labs this morning, and they said they have been short of it but it should be available in the next month.
Not sure if I want to wait or go forward with another yeast

Saison Blend
Wallonian Farmhouse
I've used the Wallonian yeast a couple times now. Not thta great for a standard saison, but an interesting Belgian Strain. The saison blend is supposed to be a couple of the strains derived from Dupont, as opposed to the wyeast/WL Dupont strains that are singular strains.

thanks for these. I figure I have until well into October to brew a saison to take advantage of the temperature of the fermentation closet, so I am not in a big hurry. I also need to suck it up and empty out the keg of Clusterfrick, so having it as the only keg available will help with that.

I've made 2 great saisons, and have used wyeast 3711, french saison yeast, both times. I'd like to try belgian yeast, but all i hear about that from those strains are that they never finish off, or are very slow to ferment.
I'm planning a pumpkin saison, i saw in zymurgy, for some time in august/september.

He just signed up for some special program White Labs has and should have a shipment coming in with every yeast White Labs sells in the next day or so.
ETA: He is also reaching out to some of the newer yeast vendors. So hopefully he will be able to get those soon too..

Well, i don't sweat a lot. I'm a sort of thin guy. Today is a bit ridiculous though.
And i just checked the weather, 94% humidity. Wonderful.
