How are raw oysters right now

Thinking about grabbing some oysters on the half shell tonight. Have they been good lately?

We had a damned cold spring, so you're probably fine. That said, it's going to start getting risky pretty soon.

Nothing risky about them, but the flavor and texture isn't as good in the warmer months, at least for Gulf oysters.

They're a bit on the larger size for us lately. More of the fatty creamy texture and getting sweeter and less salty. Still good and not really much to worry about with the harvesting standards nowadays. As long as you know you're restaurant rolls through them and they're quality white tag oysters, you're ok.

I've used 3 gallons in the last two weeks and they were running large. No complaints.

You realize the whole month ending in an "r" thing doesn't really apply with modern transport refrigeration right?

Gulf oysters spawn year round

Their spawn is controlled by water temp...they spawn in the warmer water months.

you are right but since the water is warmer in the gulf they can spawn year round
