"Can" and "do" have two very different meanings. The flavor and texture improve late in the year into the winter and through the spring for good reason...those oysters ain't spawning.

Nothing risky about them, but the flavor and texture isn't as good in the warmer months, at least for Gulf oysters.

Refrigeration has made the r mnth thing obseolete

Washington state oyster are good this time of year

IMO, Gulf oysters just aren't as good in hot months. Not a safety concern, really (although Hep A loves the hot Gulf water).

On the other hand, there are some great oysters that come in from the Pacific Northwest.

Sat in front of the shuckers at Chimes East last week, and they were plating some HUGE oysters. More than a few had that kind of milky look to them that turns me off, so I didn't get any, but they were schlepping trays the entire time I was sitting there.
