What's on Your Cinco de Mayo Menu ?

going to make some chicken and cheese enchiladas tonight. side of grilled onions and peppers, refried beans and mexican rice.

Did a pork roast in the crock pot overnight, so we are having shredded pork tacos with avocado and grilled onions. Tostados, bean burritos and ground beef tacos for the young ones.

Cheeseburgers. But I plan on doing some yard work and may form a gang.

probably going to stuff some chicken breasts with cheese and jalapenos then grill them.

I've put a rack of baby backs and a dozen chicken thighs on my smoker at 12:30. I've got some sausage to go on later, a dish of potato salad, will do some baked beans, and have several different fruit flavored types of beer to drink.

I had some nachos (no cheese) while watching the Braves game.
Lucy had corn bread after running 7 miles. Then she read some e books and had some leftover pasta. I gave the rest of the pasta to the dogs.
They said it was excellent.
I'm thinking about Chile tomorrow. Watched an Alton Brown show about it. He didn't use Tomato sauce. Weird. He did use beer. I do that. I think I'll experiment.
We are still in a record breaking cold temp period so winter food is great.

Whatever my kids want. I triplets who happen to be born on Cinco de Mayo. They never ask for Mexican. They always want me to grill something for them. This year, it was bbq chicken. I did it yesterday, because I am traveling with my job today. It kills me to leave them on their birthday, but we had a great time yesterday.
