Staying at Windsor Court and will be hitting Aquarium, Zoo, Park, etc.
Breakfast, lunch & dinner
Other things to do would also be helpful

Children's museum is nice. Carriage rides are fun even though the kids don't much care about the tourism part. There's sometimes some good entertainment across from Jackson Square that kids would like. It's sort of the luck of the draw as to what's going on there, though.
Are you looking for casual dining and do you need restaurants with children's menus? Any certain types of foods?

Insectarium on Canal. Really cool place

For other things to do, don't forget the insecterium, a free ferry ride over to Algiers and back, and possibly a trip to the little amusement park at city park. I'm not sure how many rides your little one could get on, but they also have an area called "story land".
If you do an early dinner, I would think most restaurants would be ok.

Louisiana Children's Museum is nearby.

Streetcar ride to City Park where you will find cool stuff to do

They have paddle boats and fishing in the pond.
They have a 24 hour beignet shop - Morning Call in the "casino" area.
You can take her for a snow ball - plenty of places.
Italiam ice cream at Angelo Brocato's - LINK
You can ride the Canal Street Ferry to Algiers Point for free as a pedestrian. It's a cool ride which puts you right down on the river with a great view of the city.

You could walk up to Canal and take the streetcar to Mandina's. Big menu. Casual and fine for kids.

Insectarium, Cool zoo, Mardi Gras World, Storyland, Carousel, not exactly kid oriented but good place to run out some energy in a beautiful setting is Longvue House.
