In competition chili cooking almost everyone adds a bit of chocolate. That is where I learned it years back.

Hate to troll. But, while you're right about beans, any proper texas red chili, competition or not, has some tomato element to it, whether it's just a little paste or some tomato sauce.

Have this recipe simmering on the stove right now. Made a few changes for my diet and to get rid of some ingredients.

Omitted the masa (doing paleo so no carbs)

Added: 3 bell peppers, extra garlic, half container of chopped seasonings, a fresh jalapeño, a can of green chilies (found them in the pantry), can of tomatoe paste, and a can of chicken stock (to make it more chili and less taco meat).

Just tasted it and it's damn good.

Looks good

Except that there's no way 1 tsp of red pepper flakes is enough heat. However, my wife is also from Mississippi so I understand the difference in heat preferences b/t our 2 states

I'd throw some minced jalaps and habaneros in with the onion and some cayenne in with the seasoning, along with a dark madelo beer.
